Bite-Sized Soft Pretzels

Today I'm going to show you how to make your own soft pretzel bites.


Yum!

This recipe is perfect for a lazy weekend or a football party! AND it will please almost everyone since it does not contain dairy or meat, oil, and you can control the salt content! Much healthier than those oily ones sold in food courts!






Start by mixing your yeast and warm water.


The reason you use warm water is to activate the yeast. The yeast in the bowl above is not activated because it is not mixed.


Use a wooden spoon or spatula to help it look like this!


Then add your sugar and mix. 


The last thing to mix in is your flour. 


And if it gets to difficult to mix the flour in with your spoon,


use your hand!


Once you've mixed in the 2 and 1/2 cups of flour, flip the dough onto a lightly floured surface, where you will knead the dough for about 3 or 4 minutes. I suggest throwing on your favorite song and kneading until it's done. It makes the process much more pleasant :)


For those of you who don't know how to knead, take the outer edges of the dough,


fold it into the middle and push it into the center.


After kneading, spread a small amount of oil around the bowl and place your dough in the bowl.


Then cover it with a towel.

Leave it for about an hour until it doubles in size. 


When it's risen, punch the dough down to get the air bubble out.

This is also the time to start boiling your water and turn on your oven!


Then cut it.


Into 8 pieces.


Roll out one portion into a long log. 


And cut that into the bite-sized pieces. 

Don't they look like little pillows?? :)


When your water is boiling, add the little pillows and let them sit for about 30 seconds.


When they are nice and puffy, take them out with a slotted spoon, 


and place them on a greased baking sheet. Sprinkle them with sea salt right away! Otherwise they dry and the salt won't stick!


Plop the tray into the oven when it is all covered.


And they will come out looking like this!


Don't they look delicious?!


Eat them plain or with some pizza sauce. Enjoy!


Bite-Sized Soft Pretzels

2 1/4 tsp. Yeast
1 c. Warm Water
1/4 c. Sugar
2 1/2 c. Flour
Water
1/3 c. Baking Soda
Sea Salt

Combine yeast and water. Add sugar, mix, and let sit 5 min. Mix in the flour. Turn dough onto lightly floured surface and knead 3-4 minutes. Place in an oiled bowl, cover with a towel, and let rise until doubled in size, about an hour. 

Heat oven to 400 degrees.

Boil about 6 cups water with baking soda. Divide dough into 8 equal sections. Roll each section into a long log and cut into about 1/2 inch pieces. Drop about 10 pieces into water and let sit for about 30 seconds. Using a slotted spoon, move the pieces to a greased baking sheet and sprinkle with sea salt. Repeat until pan is full. Cook for 10- 12 minutes.
