Bite-Sized Apple Pies

What screams summer more than apple pie?! That's right, Nothing! These are a perfect little summer treat as they are bite sized so you don't feel like you have to have a whole big piece. 


Yum.

Bonus: They are super easy.


These are the only two ingredients I used. Of course, you can substitute homemade pic crust and filling with just a tad more effort. 





Once thawed, roll out a piece of pie dough and cut with a circular cookie cutter. 


Push the little circles lightly down into the mini cupcake tin.


Mine needed a bit of sorting out once they were pushed down! Just overlap one of the edges slightly if that happens to you.


Next, pour half of your pie filling into a bowl.


Chop the apples up into small chunks. This makes it SO much easier to fill the cups.


Large apple pieces will not work as well for this, as you can see!

After the cups are filled roll out the remaining dough so that you can cut little strips like this. These will be the lattice top!


Place one strip over a filled pie.


Cut the strip to fit the top. 


Repeat. 


Repeat with the cross strips and intertwine them!


Or if you want it done even faster, just lay the horizontal strips over the vertical. 


Either way, they're going to be cute :)

Make sure to press the lattice top strips into the edge of the bottom. They'll stay on better that way.


For 12 mini pies, it took about one roll of pie crust. That is 24 pies per Pillsbury pie crust package. 


This is how much was left after the lattice strips. 


Twelve pies also used about 1/2 a can of pie filling. So, again, 1 can should be fine for 24 mini pies. 


Bake them at 350 degrees for 15-20 minutes.


Until you see they are nice and golden on top!!
