Spanish Vegan Meal

It was delicious.

Sparkly Pumpkins

I was gifted a little pumpkin last week. One almost too small to carve. Which is fine with me, I had many other ideas on how to decorate a pumpkin this year. Anyways, I decided on doing a sparkly pumpkin. It is so cute!

I went to JoAnn Fabrics and picked up some craft glue and glitter.


Preferably, grab a bottle of glue that has it's own brush to apply it.

Scotcheroo Cookies

A twist on the normal scotcheroo bars, these cookies are perfectly portioned and great for a party.

I made these today as a birthday treat for my husband. :)


For those of you who've never made scotcheroos, they are super easy. 

Just mix one cup of sugar with one cup of corn syrup in a saucepan.


Heat that mixture over medium heat until it starts bubbling. Stir often.


In the meantime, unwrap some kisses...

Apple Recipes for Fall

Apples are in abundance in the fall. They are usually cheap come harvest and BONUS: you can pick your own in Apple Orchards! :) Talk about a fun afternoon, complete with hot apple cider afterward!

These are a few recipes to use with all of those apples you've picked :)

Apple Cupcakes with Caramel Buttercream

This was her gift table, complete with an old mailbox for cards! Again, what a cool idea, right!?

She also wanted a banner that matched with the table card colors and went well with the grass that she grew.  I was so happy that I got to make these banners for her! They looked so good in the space! This one is made with two layers of card stock in front of a burlap layer. It really added to the rustic feel of the whitewashed wood walls.




















"Watering Hole" sign. This fun little sign was located on the bar. I love that it tells you only information needed once the party starts! :)

Wedding Decor

As I mentioned, my sister, Stacey, got married recently and I will be sharing with you some of the crazy cool details that made it such a fun celebration!

First off is the table flags.

Don't mind the people eating in the background :)

These table flags are essentially "table numbers". My sister just put a fun twist on them by using places and dates that were special to their story.

As you can read here, the Kensington Street Dance is where Stacey and her husband Jarrod met. It was so fun to read about the important moments in their relationship!

These flags were tied to sticks and stuck in real grass grown by Stacey herself!

Vegetarian Delights

My husband and I have been trying to eat more vegetarian meals lately. It is partly because I have been watching so many documentaries (namely, Food, Inc., Fat, Sick and Nearly Dead, Food Matters, and Forks Over Knives). They all have amazing information and really opened our eyes to a healthier lifestyle. We aren't full vegetarians, but we are trying!

These are some of the amazing meals we've eaten lately. Some do have dairy products which we have also been trying to limit, but they are delicious!

Crispy Potato Roast

This is my new favorite potato recipe. Lots of thin slices gives them a really nice crunch!! I've made them a few different ways already, with garlic, with green onion, and sprinkled with an herb blend. They were all so delicious. My husband and I also put some ketchup on top. French Onion Grilled Cheese Sandwich

Sometimes, I get a HUGE craving for French Onion soup. It is by far my favorite soup, but it takes sooooooo long to make. This is my quick fix food :)

Personally, I like to take a recipe and run with it. When I made this sandwich for the first time I added mushrooms to the last couple minutes of cooking the onions. I also like to use different breads. We have a favorite multigrain bread that we use instead of sourdough. Mozzarella is also a cheaper cheese that works for this sandwich and so good melted!!!!! (French Onion Grilled Cheese)




I really love sweet potatoes. AND apparently they are a new "super food". Not sure about that one, but they do contain vitamins and carotene. The easiest way to make a sweet potato is to bake it. 425 degrees for about 40 minutes (depending on the size).

Now I know sweet potatoes usually go with marshmallows or lots of butter, but I like to cover them in SALSA. Yep, that's right. It cuts calories and gives a sweet touch to the spiciness of the salsa. MMMMmm.. So delicious.

October is here! YAY! That means it's time to start putting out pumpkins and get ready for Halloween.
