Apple Cupcakes with Brown Sugar Glaze

Delicious apple cupcakes just in time for fall!


Doesn't that look good??






The recipe is super simple too! Just mix the dry ingredients and wet ingredients separately.


Mix chopped apples with wet ingredients. Combine both bowls until just mixed.

Spoon into your cupcake liners. 

(I'll let you in on a secret, I made cupcakes just so I could use my cute cupcake liners... HA!)


 Right before your cupcakes come out mix your ingredients for the brown sugar glaze.


Set your cupcakes on a cooling rack so the glaze can run off.


 Spoon glaze over cupcakes.


 It's okay if the gooey deliciousness slides off the sides...


Let them sit for a minute so the glaze hardens a bit and then take one as a treat for yourself :)




Apple Cupcakes

1 1/2 c. Flour
1/2 c. White Sugar
1/2 tsp. Baking Powder
1/4 tsp. Salt
1/2 tsp. Cinnamon
1 tsp. Vanilla
1/4 c. Applesauce
1/4 c. Oil
2 c. Chopped Apples

Preheat the oven to 350 degrees. Mix the dry ingredients and wet ingredients separately, mixing apples with wet ingredients. Pour the wet ingredients in the dry and mix until just combined. Spoon batter into cupcake liners until about 2/3 full. Makes about 12. Bake for 14-16 minutes or until golden brown.

Brown Sugar Glaze

1/2 c. Brown Sugar
3 tbsp. Butter
1/2 tsp. vanilla
1 tbsp. almond milk (or whatever you have)

Combine all ingredients in a saucepan over low-medium heat. Bring to a boil and cook for about 3 minutes. Spoon over still hot cupcakes. Let cool.
