Scotcheroo Cookies

A twist on the normal scotcheroo bars, these cookies are perfectly portioned and great for a party.

I made these today as a birthday treat for my husband. :)


For those of you who've never made scotcheroos, they are super easy. 

Just mix one cup of sugar with one cup of corn syrup in a saucepan.


Heat that mixture over medium heat until it starts bubbling. Stir often.


In the meantime, unwrap some kisses...





... and measure out 6 cups of cheerios (or rice crispies, or special K, whatever you have on hand!).



Measure out 1 cup of peanut butter. 


Easy to remember right? 1 cup, 1 cup, and 1 cup. 


Mix the PB into the corn syrup and sugar until it's smooth.


Like this. Then pour over the cereal...


... and stir until it's all coated.


Spoon your mixture out onto wax paper. Or use your hands to shape a cookie. 


 And press your chocolate kiss into the center.


Makes roughly 3 dozen.

Scotcheroo Cookies

1 c. Sugar
1 c. Corn Syrup
1 c. Peanut Butter
6 c. Cereal
Chocolate Kisses

Heat the sugar and syrup over medium heat until the sugar is dissolved. Take off heat and add peanut butter. Mix until smooth. Pour over cereal and mix in until it's evenly coated. Scoop out small amounts and press into cookie form. Press kiss into cookie. Makes about 3 dozen.
