Homemade Chili Recipe

So, after posting about all of those delicious looking soups I just had to make some for myself. What's better than a bowl full of piping hot chili on a chilly night??


Look at that steam....




Make sure you have all the ingredients: chili beans, tomato paste (if you like it thick), spaghetti or marinara sauce, salsa, onion, garlic, and tomatoes. I also use broth to add a little extra flavor. 


Start by boiling the boullion cube in 2 cups water (or follow the directions on your chicken or beef boullion package). Next, cook up the onion in either a little of the vegetable broth or olive oil. Whichever you prefer. 


While you're waiting for the onions, add two cans of chili beans to the broth.


Then add the pinto beans,


and the spaghetti sauce. Give it a good stir. 


Add lots of salsa


and cayenne pepper. :) 


By this time your onions should be about done. Add them and your tomatoes.


Lastly, add all of your spices: black pepper, salt, chopped garlic, herb blend or Italian seasoning, and a jalapeno if you like it really spicy. 

Let it simmer for 45-60 minutes. Until it achieves a thickness that you like. My husband doesn't like it too soupy so we leave it on for at least an hour. 

Top your bowl with some avocado chunks.


Enjoy your deliciously good-for-you chili :)

*If you wish to add animal products omit the second can of chili beans and add a pound of meat instead. Feel free to add shredded cheese or sour cream instead of the avocado. (But you really should try the avocado)  :)


Homemade Chili Recipe

2 cups broth (1 vegetable boullion cube and 2 c. water)
2 cans chili beans, undrained
1 can pinto beans, undrained
1 cup spaghetti sauce
1 cup (or more) salsa
1/3 cup chopped onion
2 large tomatoes
2 cloves chopped garlic
1-1/2 tsp. cayenne pepper
1/2 tsp. ground pepper
1/2 tsp. sea salt
1 tsp. Italian or herb seasoning

Cook onion in small frying pan in small amount of broth. While it's cooking, mix beans, sauce and salsa with the vegetable broth. Add the chopped tomatoes and cooked onion. Lastly, add garlic and spices and mix thoroughly. Let simmer for about 45 minutes. Check it and let simmer 10 more minutes if it is too thin. Top with avocado.
